
When it comes to food, I’ve always been a little cautious- sticking to what I know and love. My husband, on the other hand, is the complete opposite. He’s the kind of person who gets excited about unfamiliar dishes, bold spices, and street food carts with no English signs. He’s adventurous not just in travel, but especially when it comes to food.

It was on one of our early trips together, wandering through a night market in Thailand, when he introduced me to “Pad Thai.” I had no idea what to expect, but he was already chatting with the vendor like he knew exactly what to order.
When the food arrived, he didn’t just hand me a plate. He prepared it for me- just the way it’s meant to be eaten. He squeezed the lime, added just the right amount of crushed peanuts, sprinkled chili flakes (gently, knowing I’m not big on heat), and gave it a little toss before sliding the plate over to me with a smile. “You’re going to love this,” he said.
And he was right.
That first bite was unforgettable. The noodles were soft but chewy, the sauce perfectly balanced- sweet, salty, tangy, and just a little bit spicy. The crunch from the peanuts, the freshness from the bean sprouts- it all came together in a way I didn’t expect. It was vibrant, flavorful, and completely addicting.
More than just a delicious dish, that moment felt special. It wasn’t just about Pad Thai- it was about someone knowing me well enough to guide me gently out of my comfort zone and into something new. And doing it with care, right down to the lime and peanuts.

To this day, Pad Thai isn’t just a favorite meal- it’s a memory. Of a busy Thai street, a shared plate of noodles, and a small but meaningful act of love from the man who’s always been a little more adventurous- and endlessly thoughtful.
What stands out most to me isn’t just the taste of the dish (though it was amazing), but how much care he put into sharing it with me. He didn’t just say “try this” and leave me to it- he made it an experience. He took the time to prepare it just right, to introduce me to something he loved in a way that felt warm and welcoming. He didn’t rush me or pressure me; he made it easy, enjoyable, and fun.
That’s who he is. Whether it’s food, travel, or life in general, he always wants me to experience the best of it- not just for the sake of doing something new, but because he truly wants to share those moments with me. It’s never about showing off or proving a point. It’s about connection. About care. About making everyday moments meaningful.
